I use it to this day! Since I’m already familiar with the steps, I keep an abbreviated version on hand. Here are my personal notes:
Bread Schedule

~3-4 hours before starting the dough | Feed sourdough starter |
Start dough | Mix dough: – 50g starter (a bit more is ok) – 165g water – 1tsp salt – 250g flour |
+0:30 | Fold dough, possibly twice until it comes together |
+1:00 (optional) | Fold dough |
+1:00 (optional) | Fold dough |
+1:00 | Either leave dough out on the counter overnight to rise, or put in the fridge for at least one day to cold ferment |
Start loaf | Preshape dough on counter |
+0:30 | Put dough in basket for last rise |
+1:00 | Preheat oven to 450 |
Start baking | Reduce heat to 425, bake for 20 minutes covered |
+0:20 | Uncover, bake for 30 more minutes |
+0:30 | Let cool for as long as you can resist before enjoying |
