My Favorite Sourdough Recipe (and my Personal Notes)

For an easy to use sourdough recipe, this one with all-purpose flour from The Clever Carrot can’t be beat.

It has tons of details to help out beginners, including handy photos and descriptions for what each phase should look and feel like.

I use it to this day! Since I’m already familiar with the steps, I keep an abbreviated version on hand. Here are my personal notes:

Bread Schedule

Morning of BakingTake starter out of the fridge
~3-4 hours before starting the doughFeed sourdough starter
Start doughMix dough:
– 50g starter (a bit more is ok)
– 165g water
– 1tsp salt
– 250g flour
+0:30Fold dough, possibly twice until it comes together
+1:00 (optional)Fold dough
+1:00 (optional)Fold dough
+1:00Either leave dough out on the counter overnight to rise, or put in the fridge for at least one day to cold ferment
Start loafPreshape dough on counter
+0:30Put dough in basket for last rise
+1:00Preheat oven to 450
Start bakingReduce heat to 425, bake for 20 minutes covered
+0:20Uncover, bake for 30 more minutes
+0:30Let cool for as long as you can resist before enjoying
